Sweet potatoes tend to be one of those foods that people love or hate (well, in my house anyways with my picky eater of a hubby!). If you’re a hater, this simple recipe just might change your mind. It’s pretty versatile, as you can make it sweet or savoury, and have it any time of the day.
The sweet potato is packed with fibre and also contains many nutrients (vitamin A, B5, riboflavin, niacin, thiamin, and carotenoids which cause their naturally orange colour). As if that wasn’t enough reason to get more of these beautiful babies into your diet, they’re also packed with scientifically-proven medical benefits, including anti-inflammatory, anti-diabetic and anti-cancer properties as well as helping manage stress levels, manage weight, guard against ulcers, minimize the risk of cardiovascular diseases, improve digestion, regulate blood pressure, boost fertility, take care of your peepers and improve your hair and skin (no icky collagen powders/pills required!).
Without further ado, here’s the super-simple-quick recipe for Sweet Potato Toast!
1 sweet potato, washed
Nut butter of your choice (sweet option)* or avocado (savoury option)
Banana (sweet option), sliced
Using a sturdy, sharp knife, slice sweet potato into 1/4-1/2 inch slices lengthwise.
Turn your toaster/toaster oven on high and toast a couple of slices of sweet potato**.
Take sweet potato out of toaster (careful, HOT!) and top with nut butter+banana slices+hemp hearts (sweet) or avocado+hemp hearts+S&P (savoury)
* buy organic if possible, especially if you’re going for peanut butter as peanuts are usually heavily sprayed with pesticides
** you’ll probably have to toast a few times before they’re the consistency you like (aka not rock hard!). Remember to turn the toaster back down after you’re done, or your co-workers/family members that use it after you may have themselves a burnt meal!
